I didn't have time for any complicated recipe this weekend, and I'm definitely a breakfast person. I often have an egg, but I wanted to change things up a bit from my usual French Toast or fried egg.
I tried poaching an egg for the first time.
You crack an egg into boiling water with a spoon of white vinegar (which we didn't have, so we didn't add it). The result was quite messy (maybe the vinegar would have held it all together better...) but it tasted nice and the yolk cooked wonderfully.
Embarrassing, because in a poached egg the yolk is supposed to be runny...
But at least I liked the taste!
I spread some multigrain bread with some honey mustard, topped with fresh spinach, the egg and some salt and pepper. Really liked it :)
Even though it wasn't exactly Eggs Florentine...
