I love minestrone soup-- it's so healthy and yet so filling and it makes you feel warm and fuzzy. It's also a great way to enjoy vegetables that you may not normally eat. My mum and I used Jamie Oliver's recipe, with a few modifications. It was all I expected and more :) Instead of discarding the initial tomato-potato mixture, we decided to keep it and we just discarded the bay leaf. We omitted the fennel and spinach because we didn't have any at the time, but there's no reason to omit them otherwise. You can also smash up any other kind of pasta other than spaghetti.
