Nothing much, just a simple parfait. But it was so pleasing! I enjoyed it for lunch and it was surprisingly filling.
Whip some vanilla yoghurt.
Crush a small digestive biscuit and place it on the bottom of a glass. Cover with a layer of good, chunky jam (like St. Dalfour or Hero. NOT the neon jell-o like ones). Repeat these 3 layers 4 times.
Cover with a thick layer of vanilla yoghurt (1/4 of your amount).
Roast some almonds on a pan or in the oven. Roughly chop and sprinkle them over the parfait. Chill for about 1-2 hours.
Try different fruits, nuts your favourite biscuits or different yoghurts!
